 Serbian Christmas Jan. 7, 2008

Try it!  You can do it for sure!

Make a Kolach (Chesnica)!

(Sweet Bread)

2 cups milk and 1/4 lb. butter.
Put in a saucepan and let the milk and melted butter rise to the top of the pan.  (Scalded)

Place 2 cakes yeast (active or dry yeast) in 1/2 cup water with 1 t. salt and 2/3 cups of sugar.

Separately, beat 3 eggs and add to the scalded milk, butter and yeast mixture only AFTER it cools off.  (Sometimes I placed this outside to make this go faster....)

Then add the flour, between 8 and 10 cups...... until you have a nice smooth dough.  Don't put in too much flour..... just so it doesn't stick to your fingers anymore.  Knead, knead, knead for at least 10 minutes.

Cover with a damp cloth and let rise until double in bulk.

In the meantime, get a pan (those that come apart are nice, but any old round pot will do, too).  Spray with PAM or vegetable oil, butter or whatever you want.  I use PAM.

When the dough has risen, separate into 3 even pieces. Roll out like a long, long pretzel. With those three pieces crossed over each other (like an "X" with another one coming down the middle), start to braid.  When you come to the middle, braid the other way if you have to.  Just make a nice long braid.

Now you have one long braid.  Take that and place it in a circle (curl it around in the pan you prepared above). Then cover that with a wet cloth and let the dough double again.

When it's ready to put in the oven (preheat to 350 degrees), brush with this egg mixture:  An egg yolk, a sprinkle of water, and a sprinkle of sugar mixed up.  Brush it on.

Bake for about 40-45 minutes, but watch it so it doesn't burn. Take out of the oven and let sit for a few minutes, then turn upside down to eject from pan.

You'll be proud to take it to church for your Slava, or to turn with your relatives for Christmas and Easter or other important Serbian holidays!  For Christmas, you can place a lucky coin inside.  Whoever finds it, is supposed to have good luck all year long!  :-)

 Turning the kolac together....

Her smiles tell you who found the lucky coin!

Bizic, Milana K.  “Love’s Greetings.”  Sewickley Magazine.  Feb. 1985, pp. 24-26.  Explains love tokens not as “baudy tokens,” but as the forerunners of today’s charm bracelets, a regularly issued coin whose currency designation was whizzed off on one side, and then inscribed with a lover’s message, the hobby beginning in England in the sixteenth century by sailors.

Bizic, Mim.  “Molas: Colorful and Whimsical Needlework Reflects the Changing Life of the Cuna Indians of Panama.”  Sewickley Magazine. Oct. 1984, pp. 34-37.  Article highlighting the meticulous and ingenious craftsmanship of molas, and their colorful makers who live off the Atlantic coast of Panama.  Explains role played by Richard Marsh, Sr. and his role in studying the Cunas in 1923 for Smithsonian scientists.
